Our coffee comes from Five Senses, a Perth-born specialty roaster that treats coffee like fresh bread. Here's their story.

A good sandwich deserves a good coffee. For ours, we work with Five Senses, a specialty roaster that started right here in Perth.
The Five Senses story begins in the late 1990s in the highlands of Papua New Guinea, where founder Dean Gallagher was a school principal in a coffee-growing community. He started roasting beans in his home oven, and when the family moved back to Perth he traded the oven for a 1kg roaster in a tin shed. That was 2000, and Five Senses was born.
One idea from their early days really speaks to us: Five Senses set out to treat coffee like fresh bread, roasting it fresh and getting it to customers fast. It's the same thinking behind how we run our kitchen, so it's no surprise we get along.
Five Senses builds direct, long-term relationships with the farmers they buy from. In 2014 they went a step further and funded their own mill in Tiga Raja, North Sumatra, so they could work hand in hand with local operators and protect quality right from the source. They're a certified B Corp and carbon neutral, guided by a simple purpose: impacting people positively through coffee.
In 2006 Five Senses opened its first Barista Academy in Perth, and it now trains baristas across Australia. That focus on skill and consistency is exactly what we want behind every cup we pour.
